Spaghetti with Olive Oil, Pine Nuts & Anchovies

Cooking Directions:

 

Heat Olive Oil in small skillet over low heat.

 

Add minced Garlic and cook 2 minutes.

 

Add Anchovies and Pine Nuts and cook until Garlic begins to turn golden brown, about 3 to 4 minutes.

 

As Anchovies and Garlic are cooking, cook Spaghetti in large pot of boiling water with Sea Salt until just tender but firm to bite.  Drain well.

 

Return spaghetti to pot.

 

Add Oil, Garlic, Anchovy and Pine Nut mixture with Lemon Juice and toss to coat using a pasta spoon.

 

Season with pepper. Divide between plates.

 

Sprinkle generously with grated Parmesan Cheese.

 

Sprinkle lightly with fresh chopped Basil.

 

Best served with a bottle of Perrucci Family Chardonnay.

1/4 cup extra-virgin Olive Oil

 

4 large Garlic Cloves, minced

 

1 3/4- or 2-ounce can Anchovy Fillets, drained, chopped

 

2 tablespoons Pine Nuts

 

8 ounces Spaghetti

 

1 teaspoon Sea Salt

 

1 teaspoon Lemon Juice

 

Ground Pepper

 

Freshly grated Parmesan Cheese

 

Fresh chopped Basil
